Ingredients:
Filling
-
4 cups of washed fresh strawberries cut horizontally
-
1/2 a cup of white sugar
-
1/2 a cup of water
Dough
-
2 tablespoons of corn starch
-
150 grams of butter cut into cubes
-
3 tablespoons of sugar
-
2 cups of white flour
-
2 teaspoons of baking powder
-
1 egg
Other
-
1 egg yolk
-
1 tablespoon of sugar
Recipe:
-
Preheat oven to 210C.
-
Put all the dough ingredients together in a big bowl and knead till a dough forms. Spread flour on a countertop, and continue kneading the dough for 5 mins by hand.
-
Cut dough into 2 balls and store in a plastic wrap. Refrigerate.
-
In a pot, add all the filling ingredients and mix them together over medium heat. Leave till strawberries become wilted then remove from stove and allow to cool.
-
Roll out the first ball of dough till it becomes slightly larger than the pie pan (covering all the ends and corners). Place into the pie pan and trim off any excess bits.
-
Roll out the second ball of dough slightly thicker, and cut into thin strips.
-
Pour the strawberry stuffing into the pie pan, then arrange the thin strips across the top in a lattice (place strips across first then one by one weave strips in the other direction. Check picture below). Cut off any excess as needed.
-
Brush the egg yolk mixture on the top layer of the pie and apply sugar then bake for 20-25 mins or until the crust turns golden brown.
