400 grams (average of 40 pieces) of frozen homemade salmon and ricotta ravioli, pre-cooked

Ingredients: Eggs, flour, smoked salmon, ricotta & roumi cheese, thyme, garlic, spices.

Instructions:

- Place ravioli into boiling water straight from the freezer until they begin to float.
- Remove ravioli with a slotted spoon never dump them into a colander to prevent them from bursting.
- Saucing the ravioli by adding them to the pot of the sauce not dumping the sauce on top of the pasta to serve.
